These Mini Pancake Stacks are fun, fluffy, and totally customizable. They are perfect for a festive brunch or a patriotic 4th of July treat.

Whether you’re making them fresh or using store-bought mini pancakes, this layered dessert is all about combining creamy ricotta, fresh berries, and soft pancakes into bite-sized stacks of joy.

Each stack is layered with a light ricotta-yogurt filling, sweetened with honey and paired with vibrant fruits like strawberries, blueberries, and banana. They’re cute enough for a party platter but simple enough to whip up on a weekend morning.

What You’ll Need

This recipe uses 15–18 mini pancakes (enough for 2–3 servings of 3-layer stacks), plus a generous amount of creamy ricotta mix and fresh fruit.

  • Mini pancakes, homemade or store-bought
  • A simple, creamy ricotta mix
  • Fresh fruit: strawberries, blueberries, and banana

You can use all the pancakes in one go or make a smaller batch and freeze the rest for another day.

How to Make Mini Pancake Stacks

Start by preparing your pancakes. You can use store-bought mini pancakes to save time, or make your own.

If you’re following a homemade recipe, you can halve the batter from my American Flag Sheet Pan Pancake recipe (swap in a small egg) and cook them into small rounds on a skillet. Aim for light and fluffy mini pancakes about 2–3 inches across.

Tip!

Since you’re making mini pancakes, they cook faster than regular ones. Be sure not to burn them! As I was spooning the batter onto the pan, the first cakes were ready by the time the pan was full and it was already time to flip them. Just keep a close eye on your pancakes!

Then once they’re ready and while cooling, whip up the ricotta filling. In a bowl, mix ricotta cheese, Greek yogurt, and honey until smooth and creamy. You can chill it briefly if you’d like a thicker texture for stacking.

Now it’s time to build the stacks. Start with a pancake as your base. Spread a small spoonful of ricotta mix on top, then add a few blueberries. Add another pancake and layer with ricotta and banana slices. Finish with a third pancake, another layer of ricotta, and top it all off with sliced strawberries.

Repeat until you’ve used up your pancakes or made enough stacks to serve. You can present them on a platter with toothpicks for easier handling, or plate them individually for a more elegant brunch look.

Instructions

    • Place a mini pancake on the plate.
