These Melon, Watermelon, Cucumber & Goat’s Cheese Skewers are summer appetizer perfection: light, bright, a little creamy, and full of sweet-savory flavor. They’re fresh and colorful, easy to put together, and look beautiful on a platter — especially when finished with a zesty spicy mint vinaigrette.

What I love about this recipe is how flexible it is. You can mix and match your ingredients depending on what you have, and arrange them however you like. I used small appetizer sticks and made different combinations: some with honeydew and cucumber, others with cantaloupe and watermelon, and some without cucumber at all. There’s no “right” order — unless you’re aiming for a super polished, uniform look.

What You’ll Need

You’ll only need a few ingredients for the skewers and vinaigrette:

For the skewers:

  • Honeydew melon
  • Cantaloupe melon
  • Watermelon
  • Cucumber
  • Goat’s cheese (the firm kind that you can cube)

You can cut the fruit and cheese into uniform cubes — I used a cube-shaped cookie cutter to make them perfectly even, which adds that extra touch if you’re making them for a party.

How to Make the Spicy Mint Vinaigrette

This vinaigrette is fresh, sweet, citrusy, and has just a touch of heat from finely chopped chili. It brings everything together and elevates the skewers from simple fruit bites to something really special.

To make it:

  1. Finely chop a few fresh mint leaves — you want enough to bring fragrance without overpowering.
  2. Slice a small piece of red chili very finely, removing the seeds first (you CAN skip this, but I absolutely loved the subtle heat from the spice).
  3. In a small bowl, whisk together the chopped mint, chili, the juice of half a lime, about ½ teaspoon of honey, and a dash of salt.
  4. Mix well and taste — you can always adjust the lime or honey depending on your preference.

Let it sit for a few minutes to infuse before using.

Assembling the Skewers

Cut all your fruit and cheese into similarly sized cubes. You can use a sharp knife or a small cookie cutter for cleaner edges. Then start building your skewers — the order doesn’t matter unless you’re after a very uniform, styled look.

Because I used shorter sticks, I kept mine to 3–4 pieces each. Some had watermelon, cucumber, and goat’s cheese. Others had cantaloupe and honeydew with cheese. A few didn’t have cucumber at all. It’s fun to create variety on the platter, and everyone gets to try different flavor combos.

Once your skewers are ready, drizzle them generously with the mint vinaigrette — but here’s a tip: do this in a separate dish, then move the finished skewers to your serving plate. That way, they don’t sit in the excess vinaigrette and get soggy or too juicy.

Serve right away, or chill for up to 30 minutes before serving for extra refreshment.

Why You’ll Love These Skewers

  • Don’t skip the vinaigrette – it brings everything together
  • Assemble just before serving for best texture
